Fresh garlic is just a head of garlic that has not been cured and dried for storage.

It is bursting with juiciness and is fun to cook with and eat. It has a freshness that dried garlic doesn't quite have. We love dried garlic for its long holding capacity, but there's something special about fresh, seasonal garlic.
